In a bowl, mix:

- 2-3 tbsp Chimichurri (Skinny Latina or homemade)
- 1/2 cup pineapple, small diced
- 1 tbsp red onion, small diced
- 1 tbsp bell pepper, small diced
- Juice of half a lime
- 1/2 tbsp olive oil
- 1 tsp chopped fresh cilantro
- Salt and pepper to taste
