1-2 Chicken breasts or thighs, cut into small pieces (cubes)
2 tbsp of Skinny Latina Asian Persuasion
Few leaves of Butterhead lettuce
½ small onion, diced
½ red or any color bell pepper, diced
Shredded cabbage and carrots
½ cup Brown rice, cooked
1/2 - 1 avocado, diced
2 tbsp of English cucumber, diced
Sliced scallions for garnish
Lemon for serving, optional
Salt and pepper
DIRECTIONS:
In a bowl, season the chicken with salt and pepper and add the Skinny Latina Asian Persuasion marinade. Mix well and let marinade for at least 10 minutes. Once ready to cook, remove excess marinade and discard.
In a medium-low heat pan, cook the chicken in a little avocado or olive oil. Make sure to sear the chicken well on all sides but do not overcook as the marinade can burn easily if left unattended. Put chicken aside and add the onion and bell pepper to the pan, season with salt and pepper and let cook for a few minutes. Put chicken back in the pan with collected juices. Let cook for a few minutes and it’s ready to serve.
Lay the butterhead lettuce leaves on a plate, add shredded cabbage and carrots, brown rice, cucumber, top with cooked chicken, avocado, and scallions. You can serve with a couple of lemon wedges and BUEN PROVECHO!
